Grain Starting Temperature: 75F
Desired Grain/Water Ratio: 1 quarts/pound
Strike Water: 3.38 gallons of water at 169F

Notes:
1 tsp. Cardamon
1/2 tsp. Whole Cloves
2 tsp. Cinnamon
1/2 tsp. Allspice
1/2 tsp. Nutmeg
1 oz. Ginger
Zest of four oranges
1 tsp. Gypsum im mash
1 tsp. Epsom Salts in mash
1 tsp. Lactic acid in sparge.
1 tsp. Irish Moss
3/4 cup corn sugar for priming.
Chimay yeast
Add all spices and irish moss last 15 minutes of boil.
Sparge with 5 gallons water at 170 F.

Excessive carbonation. Cut priming suger back to 1/2 cup next time.
Outstanding beer. Took 1st place in catagory at Shamrock Open 2000 and
1st place in best of show.
